Awhile ago I did a breakdown of what you typically get when you order a quarter of beef. It's a question I get all the time so I figured it would be helpful. Well I've been meaning to follow that up with a general breakdown of what you get with a half pig. So here it is!
Here is an approximate breakdown for 112 lb. half pig. The amounts will very depending on the size, but that is the size we aim for.
- 13 lbs Loin- Pork Chops and loin roasts
- 15 lbs Bacon (there is some shrinkage during curing process)
- 18 lbs Hams- can be fresh, cured, or ground into sausage
- 9 lbs Shoulder/Boston Butt - can be Roasts(excellent), pork steaks(great for grilling), Sausage, or Canadian bacon
- 10 lbs Picnic Roast - can be roasts or ground for sausage
- 4 lbs Ribs
- 9 lbs Sausage - Can be Breakfast, Sweet Italian, Hot Italian, Cajun, or Ground Pork. Bulk(1lb pkgs loose) small links, large links, and patties available
- 20 lbs backfat for lard
The above is how a half pig is typically cut. However I can customize things to fit your family's needs. If your family is like mine we love lots of sausage! It's easy to cook up, it's delicious, and it can be used in so many ways!
By the way! The breakfast sausage (It comes in small links) is by far my families favorite sausage.
Now, except for an occasional get together with family, we aren't big ham eaters. So what I usually do for my family is grind the hams into sausage and that alone will triple the amount of sausage that comes with your half pig.
