Beef Enchiladas 

Sauce:

  • 2 Tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 Tbsp Chili powder
  • 1/2 tsp oregano
  • 1 tsp cumin
  • 1/2 tsp salt
  • 3 1/2 Cups Tomato sauce

Heat oil in sauce pan. add onion and garlic saute til soft. add tomato sauce and spices. Cover and simmer for 30 mins, stirring occasionaly. 

Enchiladas

  • 2#'s ground beef
  • 2 Tbsp olive oil
  • 1 med onion, chopped
  • 2 garlic cloves, minced
  • 1/2 tsp salt and pepper
  • 1 can of black olives, halved (optional)
  • 10 flour torillas, medium soft taco size
  • 3/4 -1 cup cheese, shredded
  • enchilada sauce 

Directions

  1. preheat oven to 350
  2. heat oil in a large skillet, cook onion and garlic til soft, add ground beef and brown. season with salt and pepper and stir in 1 cup sauce and olives (if using).
  3. spoon sauce in bottom of a 9x13 pan, coat both sides of a tortilla, fill it with a generous amount of beef mixture. roll and place seam side down in pan. repeat till all the tortillas are full and mixture is gone. 
  4. top with remaining sauce and cheese. 
  5. cover and bake for 15-20 mins
  6. serve with a scoop of sour cream on top. beans and mexican rice are great sides for this dish.

Prep time: 15 mins + 15 mins for baking. (sauce time: 35min)

Serves: 10 enchiladas.

Note*you can just buy enchilada sauce if you don't want to spend the extra time making some.
